The cheeseburger at Gimlet is a late-night ritual. Offered only on the Supper Menu from 10pm on Fridays and Saturdays, it appears behind velvet curtains, white tablecloths, and a room already humming with celebration.
There is no description on the menu. Just trust.
The burger arrives centred on a scalloped plate in a fine dining room. A thick chuck and brisket patty on a soft potato bun, American cheese melting into the meat, dill pickles, white onion, butter lettuce, and a house-made dill sauce that is bright, rich, and generous. The patty sits directly on the bun, a technical rule broken with confidence. When you know what you’re doing, you can.
It is familiar food treated seriously, without losing its soul. McDonald’s energy, elevated. Theatre without stiffness. Care without fuss.
